INDIGENOUS DIRECT: ACCESS THE STORY BEHIND THE SUGAR CAANE.co has an exclusive, importation contract with the Arhuaco Tibe, living in the Sierra Nevada mountains of Colombia. For the Arhuaco’s, believe they are responsible for maintaining a balance between “the little brother” (us in the developed world) and the spirit gods. Before each seed cane they perform a ritual dance. Some of their beliefs include; harvesting and cutting of the sugarcane is done only when the moon is in its waning phase and everything that enters the ground or the sugar must be 100% organic to respect Mother Earth. They were the first to oppose GMO-seeds in Colombia and have access to 32 indigenous strains of sugarcane native to Colombia. .

The process of handcrafting sugar
The process of handcrafting sugar CAANE.co’s SELECT INDIGENOUS SugarS ARE GROWN on steep mountain sides in Colombia making it impossible to use modern machinery for harvesting and transporting of the SUGARcane. As a result, the cane is cut by hand with a machete and loaded onto a donkey to make its way down winding paths for the pressing. The cane is manually fed into a press. The solid particles in the juice are removed to minimize any fermentation from occurring. In keeping with sustainable practices, all spent sugar cane fibers are used as a natural fertilizer for heating the boiling furnace. Then dehydration and heating begins. There are a series of large heating pots in a row. The juice is hand stirred, using a screen to remove any additional impurities that rise to the surface. As the juice is heated in one pot it is manually scooped with a large spoons and thrown in the air to the next heating pot, heating and cooling the sugar. As the moisture content evaporates, it thickens to a fudge-like consistency. Once thickened, the sugar is then hand pushed through screens to convert it into a granular form. Finally the sugar is packaged in CAANE.co’s 50-lb bags and placed on pallets for export to Philadelphia. The pallets are 7 to 8 feet tall and contain 3,700-4,000-lbs or 2 tons of sugar.

This fluctuation creates tastes of caramel, toffee, and plum. However, lower altitudes create a lighter in color and tastes more of apricot, honey.Soil & farming techniques Biodiversity, crop rotation and natural fertilizers.Production Dehydration of the cane juice, the higher the temperature the darker the sugar typically, where as a low temperature for a longer period of time, results in a lighter sugar.FRESHNESS Like all natural products, CAANE's sugar retains more complexities and flavor the fresher it is. The older the sugar gets, these highlights will slowly flatten.

Unlike commercially refined sugars, CAANE.co’s catalog of indigenous sugars do not go through the heavy mechanized process that strips away the sugarcane’s natural nutritional content. As a result, CAANE.co’s sugar retains the vitamins and minerals: iron-25%, calcium-6%, potassium, magnesium and vitamin A, B, C-4%, D & E. Furthermore, the carbohydrates in our sugars breakdown slower in your bloodstream, providing a sustained energy release rather than a sharp blood sugar spike. This means CAANE.co’s sugar has a lower glycemic index then your typical refined sugar, which makes it healthier to consume.
